Every year we have a 4th of July party to celebrate Independence Day with fun, food and fireworks. This year we have a new addition to our get-together - a charcoal grill! Although we've had a gas grill for years {and it works great}, I'm ok with leaving it to the side this holiday weekend. There is just something special about starting up the charcoals in a chimney starter, smelling the smoke in the air and tasting the flavor in our food that only charcoal-cooking can create. Of course I have to show off our new charcoal grill to friends and family on the 4th of July, so I created this Cedar Plank BBQ Western Bacon Meatloaf. This recipe is sure to wow a crowd and I can't wait to serve it at our party! It's a 2lb meatloaf loaded with tangy bbq sauce, crispy bacon, fried onions and sharp cheddar cheese - cooked on a cedar plank over fiery hot charcoal briquets. It can be sliced and easily served to a crowd, making it a perfect addition to our potluck-style celebration. {and the perfect opportunity to cook with charcoal on my new grill!}

Although I sure do miss the cold weather of Wintertime, there is something about the crisp, fresh air of Springtime that can't be beat! The mornings are the best - especially for heading out to your local farmers market. We have several in our local area to choose from, all of them unique and wonderful! This past weekend our family headed out to explore the treasures at one of our favorite farmers markets and to pick up ingredients for these Carne Asada Sweet Potato Fries. My kiddos have recently started requesting the Carne Asada Fries when we dine-out at our favorite Mexican restaurant - but let's be honest, it's not a healthy dinner option. The Carne Asada fries are deep-fried russet potato fries smothered in cheese, carne asada, guacamole topped with more cheese. I decided to healthify this entrée by adding fresh produce from the market and using less meat and cheese - and by ditching those greasy, fried french fries with all-natural Sweet Potato Fries.

Bacon-Wrapped Maple & Brown Sugar Mini Meatloaves

I've been on a Meatloaf Mission since I've started cooking for my husband, some 7 years ago. There have been plenty of good meatloaves served at our dinner table, but nothing spectacular. Not until now. My mission has come to an end as I now have "My Meatloaf"! My secret ingredient? Quaker Life Maple & Brown Sugar Cereal. {Because what fun is a fabulous recipe without a secret ingredient?!?} I already had my heart set on making these Bacon-Wrapped Maple & Brown Sugar Mini Meatloaves, but decided to jazz them up a bit by replacing regular breadcrumbs with cereal breadcrumbs. DIY Maple & Brown Sugar Breadcrumbs - with just a push of the food processor ON button.
It takes 2 cups of Quaker Life Maple & Brown Sugar Cereal to make ¾ cup Maple & Brown Sugar Breadcrumbs. And while I realize they're not technically "breadcrumbs", since they're not made of actual bread - they do the same job, so stick with me here. This recipe for Bacon-Wrapped Maple & Brown Sugar Mini Meatloaves calls for ¾ cup of Maple & Brown Sugar Breadcrumbs which means there is still an almost-full box of Quaker Life Cereal left to enjoy in the morning for breakfast. {Bonus!} I love the sweet and crunchy goodness of Life cereal to kick off my day and lucky for me, my kids do too - so it's a cereal we all agree on. {Double Bonus!!}
These Bacon-Wrapped Maple & Brown Sugar Mini Meatloaves are incredibly moist, ultra flavorful and have even the most anti-meatloaf person finishing their plate. {true story, my children are the proof!} I am so excited to be sharing this recipe with you - it's a keeper!!
Bacon-Wrapped Maple & Brown Sugar Mini Meatloaves
yields five 1-cup loaves
{PRINTABLE RECIPE}
Ingredients
1½ lbs ground beef
½ cup onion, chopped
½ cup green bell pepper, chopped
¾ cup Maple & Brown Sugar Breadcrumbs {see recipe below}
2 eggs
¼ cup brown sugar
2 tablespoons maple syrup
¼ cup ketchup
½ cup milk
1 ½ teaspoons salt
¼ teaspoon ground black pepper
5 slices bacon
Glaze
¼ cup ketchup
1 teaspoon soy sauce
1 tablespoon brown sugar
1 tablespoon maple syrup
Directions
1.Heat oven to 350
2.Mix together all ingredients except bacon {first 11 ingredients} until well combined. Measure out five 1 cup portions and shape into small loaves. Place on baking sheet and refrigerate for 20 minutes.
3.After loaves have chilled, wrap one piece of bacon around each loaf.
4.Bake for 30-35 minutes, until loaves have started to brown. Remove from oven, raise temperature of oven to 400.
5.Mix together glaze ingredients {this can be done while loaves are in oven} and brush onto loaves.
6.Bake for additional 10 minutes.
7.Serve and enjoy!!

{yields ¾ cup breadcrumbs}
Ingredients
2 cups Quaker Life Maple & Brown Sugar Cereal
Directions
1.Place cereal in food processor.

Black & Blue Baguette Sandwiches
Have you ever had a last minute disaster with a dish you were bringing to a party/get-together? It totally happened to me this year. I had planned on bringing Black & Blue Crostini as an appetizer to our family's Thanksgiving dinner. Not only planned, but got all the ingredients together and started to prep it. The first step is to marinate Roast Beef in an olive oil & herb mixture. {totally delicious!} Only... I had cheaped out and bought a lesser brand olive oil than I normally do. {pinching pennies} FAIL. The olive oil coagulated during the marinating process and I was left without an awesome appetizer to show off. {i almost cried} However, this roast beef was not going to be wasted. Oh no, no, no. Instead I sliced it up, sauteed it and added the container {these hips didn't grow over night} of blue cheese that was supposed to be used in the Black & Blue Crostini. Then I served it on a toasted baguette - again, that was supposed to be used in the Black & Blue Crostini.
My husband and I were both moaning with joy while eating these Black & Blue Baguette Sandwiches. I'm sure it would have been disgusting to watch - but you totally would've wanted a bite.
And I would've shared, mostly because I love getting people addicted to food that I love.
Black & Blue Baguette Sandwiches
(PRINTABLE RECIPE)
Ingredients
½ cup extra virgin olive oil
4 cloves garlic, minced
1 tablespoon minced fresh rosemary leaves
½-1 teaspoon red pepper flakes (depending how spicy you like it)
Freshly ground black pepper, to taste
1 lb sliced deli roast beef
5 oz. crumbled blue cheese and/or gorgonzola
1 sourdough baguette - cut in half lengthwise, split open and toasted
Directions
1. Mix together olive oil, garlic, rosemary, red pepper flakes and pepper. Set aside.
2. Separate & slice pieces of roast beef, place in gallon sized bag. (i use a bag because most of the air can be removed leaving just meat and marinade to mingle)
3. Pour olive oil mixture into bag. Seal it almost close, take as much air out as possible and seal. Let marinate in the fridge for at least an hour.
4. Heat large skillet over medium-high heat. Add roast beef and cook until most moisture has evaporated. Remove from heat, stir in blue cheese/gorgonzola.
5. Split meat up over baguettes.
6. Devour. Try to share. :)

Steakhouse-Stuffed Cheeseburgers

My husband is a "meat-man" and was completely the inspiration for these Steakhouse-Stuffed Cheeseburgers. He says that the only thing better than meat, is meat. He is true to his word too, the guy will eat the biggest steaks at any steakhouse we visit. With that in mind, I took flavors that can be found at steakhouses {bacon, mushrooms, fried onions, blue cheese & steak sauce} and stuffed them into a 1/2lb burger. This may have been one of my best ideas ever, my only regret is that I would have used more stuffing in each burger. However, the flavor was amazing and each ingredient could be tasted. Even though I made the Steakhouse-Stuffed Cheeseburgers for my husband, I am a total fan of them now!

The Good Cook Stuffed Burger Press is so easy to use and a breeze to clean. I have made stuffed burgers by hand before, with no Press, and they took much longer to make and looked no where as uniform as these ones did. It's certainly a new favorite kitchen gadget of mine. Even though I thought I had used a lot of stuffing in each burger, I could have used way more - can't wait to use it again and see just how much stuff I can stuff into a burger!
The Good Cook Cast Iron Grill worked wonders. I used it on my glass top stovetop with no worries due to the smooth surface on the bottom of the grill. Plus, did you know that by cooking with cast iron there is iron added to the food? I, unfortunately, need to add iron to my diet and use cast iron reguarly. I love that this pan leaves grill marks on the burger and also keeps them from soaking in grease. It's going to be perfect for the wintertime when it's too cold/rainy to bbq outside.
The rest of the kit, a Mini Chef's Knife, Folding Grater, Non-Slip Flexible Cutting Board and Turner were perfect for helping get the Steakhouse-Stuffed Cheeseburgers ready to be devoured. I love that the grater has a fancy shred side, the smaller pieces of cheese melt faster which was great for these burgers. The knife and cutting board were a great combo - and the cutting board really is non-stick and didn't slide around on my tile counter tops. The turner, which is pictured above, did the job for our burgers and will work great with grilled cheese sammies too!

makes 4 1/2lb burgers
Ingredients
½ cup cooked bacon, chopped
½ cup blue cheese, crumbled
⅓ cup fried onions
⅓ cup mushrooms, chopped
2lbs ground beef
¼ cup steak sauce
1.5 cups Monterey Jack Cheese
Italian Seasoning
Directions
1. Mix together bacon, blue cheese, fried onions and mushrooms. Set aside.
2. Place 1/4lb ground beef in bottom of Good Cook Burger Stuffed Burger Press and create a pocket in the meat. Fill (FILL) with bacon mix and then drizzle with 1/4tbsp steak sauce. Top with another 1/4lb ground beef and press again to create a stuffed burger. Repeat, 3 more times.
3. Grill (I used the Good Cook Cast Iron Grill) over medium-high heat until burger is done to your likeness. I cooked ours for around a total of 12 minutes (for medium-well), adding the Monterey Jack Cheese at the ten minute mark, sprinkling Italian Seasoning on top.

Meat Lovers Dinner Spread with Save Mart's {Pick 5 for $25} Promotion #FreshFinds
To celebrate my family's love of meat, as part of a sponsored post for Collective Bias® and Save Mart, I made a Meat Lovers Dinner Spread using meat from my local Save Mart Supermarket. #FreshFinds #cbias
This past weekend I made a few Meat Lover's dreams come true! I prepared a Meat Lovers Dinner Spread where every dish had meat in it. It was fun to create, cook and serve - not to mention that it was DELICIOUS to eat. My inspiration was Save Mart Supermarket's current Pick 5 for $25 promotion, they have an awesome selection of meat for $5 each if you purchase 5 of the qualifying products.

I bought a couple Boneless New York Steaks, a Salmon Fillet, Large Prawns and Ground Beef. Those choices weren't even half of the selection. There was also chicken products, ground turkey, tilapia fillets, lamb chops, country style ribs, albacore tuna steaks and so much more! I posted pics from my shopping trip on Google+ if you want to see all the goodies I found. :)
What I loved was how everything that was included in the promotion had a big round sticker on it - it made it so much easier to make my selections. It can be so annoying to look for an item that you know is on sale, but there is no signage. No worries at Save Mart!! I even found items that were not in the store advertisement such as frozen Tyson chicken products like chicken nuggets and popcorn chicken!
Without any firther ado, let me share with you how I made our Meat Lovers Dinner Spread!
The first dish I prepped was an Asian Salad with Grilled Salmon. This was so easy! Just marinate the salmon in teriyaki sauce, grill (skin side down) then chop, cool and mix with a bagged salad that has Asian flavors to it. I used Taylor Farms Asian Salad that I found in Save Mart's produce section.
This tasted amazing and is definitely going to be served again! The flavors just meshed perfectly together.
Next was the Lemon-Pepper with Dill Prawn Skewers. This dish is also super easy - just a little time consuming. I shelled the prawns and thread them onto bbq skewers. I used the method that we use for baiting a hook with shrimp, just start at the tail and go through the body. Then they sat in a marinade I found at Save Mart, Weber Just Add Juice Lemon Pepper, with fresh dill added. These bad boys only need a few minutes on the grill to cook - you know they are done when they turn pink!
These were a HUGE hit and I can't wait to make them with different marinades. They are so easy to eat and the kids found them very intriguing.
Then the Rodeo Cheeseburger Stuffed Potatoes! I browned up half a pound of ground beef and half a pound of beef bacon (the bacon was not part of the Pick 5 for $25 promotion, is was just something that I couldn't live without!) and added fried onion. I filled up cooked potato shells and topped with cheese and bbq sauce, then baked at 350 until melted.
These were delicious and such a fun spin on stuffed potato skins!
And last, but certainly not least, was our Mini New York Steaks with Blue Cheesy Mushroom Topper. Oh my!! I call them mini because we cut the steaks in half. To season the meat all I used was Garlic Salt with Parsley and Ground Black Pepper, then let it sit in the refrigerator for about 45 minutes before cooking.
The Mushroom Topper was made while the steaks were grilling - its fast and fresh! If you like mushrooms and you like blue cheese - you will definitely want to keep this recipe in mind next time you will be grilling up some steaks!
Blue Cheesy Mushroom Topper for Steak
(PRINTABLE RECIPE)
Ingredients
2 tablespoons butter
8oz Mushrooms
½ tablespoon fresh garlic, chopped
½ tablespoon fresh chives, chopped
¼ cup blue cheese, crumbled
Directions
1. Melt butter in skillet over medium-high heat.
2. Add mushrooms and cook for a few minutes until mushrooms are soft.
3. Add garlic and chives. Cook for a couple more minutes until garlic starts to turn golden.
4. Remove from heat and stir in blue cheese crumbles. Cover and let sit a couple minutes.
5. Top steaks and serve immediately.

Bruschetta Cheeseburger #FreshFinds
To kick off hamburger season, as part of a sponsored post for Collective Bias® and Save Mart, I made Bruschetta Cheeseburgers using ingredients from my local Save Mart Supermarket. #FreshFinds #cbias
Summertime means grilling. Grilling means hamburgers. Which means... it's hamburger season y'all!! I'll admit, my burgers usually lack any kind of pizzazz. I am a cheeseburger kinda girl, just add mayo, ketchup, lettuce and pickles to make me content. However, I heard that Save Mart Supermarket has an upcoming sale featuring Build a Better Burger items and I was instantly inspired to, well, build a better burger!
I headed to my local Save Mart to discover some fresh finds and had to share a picture of their produce department. Check out the charming baskets the veggies and fruits are displayed in!! It's the small touches that keep me coming back - I am all about a homey atmosphere at a grocery store.
Tomatoes scream summertime - so I just had to include them in my "better burger". Even my picky-eating children love tomatoes. Although we didn't plant a garden this year, I still have Save Mart and their wide selection of tomatoes - from Cherry to Roma to Hot House. With the cute baskets. :)

I made Bruschetta Cheeseburgers - 1/3lb hamburger patties, topped with mozzarella cheese and a simple homemade bruschetta. It was quick, easy and best of all - tasted of summertime!! Letting the bruschetta chill before serving added a nice, crisp touch to the burger on a hot day. I think I may have inspired myself to whip up another burger using other seasonal produce! (Back to Save Mart I go...)
Simple Homemade Bruschetta
(PRINTABLE RECIPE)
Ingredients
2.5 cups chopped tomatoes
1.4 cup basil leaves, sliced
1 tablespoon garlic, minced
2 tablespoons extra virgin olive oil
salt & pepper to taste
Directions
1. Combine all ingredients. Chill before serving.

Cheese & Burger Challenge - #1 Casanova
A few years ago I stumbled across one of the most awesome sites out there – Cheese & Burger Society. It is a collection of the most beautiful hamburgers I have ever seen. Mr. Hungry Harp and I drooled all over the keyboard as we flipped from hamburger to hamburger. (The site is set up like a rolodex, so you can “flip” through the selection of burgers.) We talked about making some of them, but it never materialized into anything.
Then the other day, as I was making our weekly menu, Cheese & Burger Society crossed my mind. I decided to make one of their delicious looking creations, but didn’t know which one. How about all of them? Yes! Of course, I couldn’t make them all at the same time – that would be way more extreme than anything I would want to deal with… haha. But how do you pick only one when there are 30 choices? Well… I decided to start a little challenge for ourselves, start at #1 and slowly work our way through them all!
#1 on the list is the Casanova. I did a little research on the actual man named Casanova and let me tell you, the things he did have no place on a food blog. The man was a freak. Let’s just stick to talking about the hamburger here…
The Casanova (burger) is built on a potato roll – it starts with mayonnaise, sliced ham, 1/2lb burger patty, swiss cheese, sautéed mushrooms and ends with Dijon mustard. I am pretty sure it was the biggest burger I have ever made. Mr. Hungry Harp said it was awesome and he loves when meat from an animal besides a cow is put on his hamburger. (A bit morbid, I know…) I thought it was pretty good – not spectacular, because I am not a huge fan of Dijon mustard.
The next burger, #2, for us to try is the Rhinelander. Rhinelander is a city in Wisconsin – which is a little less risqué than Casanova. Can’t wait to share it with you!

Meat Chili Sauce
Oh man did I have a craving for a chili dog this past weekend. The craving was bad, it hit hard. I was going to buy canned chili before convincing myself to not be lazy and make my own. I am so glad I decided to not go the easy route on this one; the homemade meat chili sauce came out uhmazing.
This was my first time making meat chili sauce, so I had to poke around the internet to see how others make it. I was a little surprised to see that some people boil the ground beef in this recipe to produce a smoother texture. Pretty interesting stuff and I was excited to try it – I had always wondered if anyone ever boiled ground beef and now was my chance to give it a shot.
This recipe calls for 3lbs of ground beef since that is how much I used – the idea was to make enough for a couple meals and it looks like we will get a total of 3 out of this recipe. Score! Instead of hot dogs, next time we will have chili cheese fries alongside a salad. Not sure about the 3rd time, maybe chili-cheeseburgers… it all sounds good to me. ;)
My craving was satisfied beyond what I ever imagined. This recipe is a keeper and a crowd pleaser!
Meat Chili Sauce
(printable recipe)
Ingredients
1 QT beef broth
water
3 lbs ground beef
1 large yellow onion, diced
30oz tomato sauce
6oz can tomato paste
3 tbsp garlic cloves, minced
3 tbsp chili powder
2 tsp salt
3 tsp cumin
1.5 tsp cayenne pepper
3 tbsp cider vinegar
3 tbsp Worcestershire sauce
1 bay leaf
Directions
1. Bring beef broth and water to boil. Add ground beef and cook until no longer pink. Drain and return to pot.
2. Over medium-high heat, add remaining ingredients. Stir well. Bring to boil and reduce heat to low.
3. Cook for 1 hour, stirring occasionally. If consistency is too thick, add water (or beer) while cooking.
4. Enjoy!

Daddy's Delight #2 - Mr. Potato Mess
This is what happens when my husband gets in the kitchen. I can guarantee that you will not find this recipe on any diet plan. However, if you like beef, potatoes, cheese and fried onions - you will LOVE this! I can guarantee that. :)
On top of being disgustingly delicious, it is also "easy-peasy-lemon-squeezy" to make!
Mr. Potato Mess
Ingredients
1 lb ground chuck
2 cups water
1 8x8 glass baking dish
1 box Scalloped Potatoes (We used Betty Crocker Scalloped Potatoes, 4.7 oz)
2/3 cup milk
1 tablespoon butter
1/2 cup french fried onions (we used French's Fried Onions)
1 teaspoon ground black pepper
Directions
1.Heat oven to 450
2. Brown ground beef, drain
3. Put 2 cups of water in 8x8 glass baking dish, place in microwave for 2 minutes - or until water is boiling
4. With whisk or fork, mix in seasonings from Scalloped Potatoes box
5. Add milk, butter, potatoes from Scalloped Potatoes box and beef - stir until well combined
6. Bake for 20 minutes, sprinkle fried onions and ground black pepper on top and return to oven
7. Bake for an addtional 5 minutes or until fried onions are golden brown
8. Let cool for 5-10 minutes and serve
