Awesome Chicken Spread

I was on a mission to find the Chicken Salad recipe of my dreams and I came across a recipe for Zesty Chicken Spread at My Catholic Kitchen. I made a couple of adjustments, because that's how I roll, and the outcome was amazing. This recipe is so good I have it memorized already, it is too good to forget. :)

Awesome Chicken Spread
Ingredients
  • 4 cups chopped chicken meat (I used roasted chicken thighs that had been marinated in Italian dressing before cooking)
  • 8 ounces cream cheese
  • 1/2 cup mayonnaise
  • 1 dry package Good Seasons Garlic & Herb Salad Dressing Mix
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1 tsp dill (I used dried since it was what I had on hand, I imagine fresh dill would be amazing in this recipe)

Directions
  1. Mix everything together
  2. Let marinate in fridge for a couple hours
  3. Enjoy over crackers or bread

Tandoori Inspired Chicken

Key word is Inspired. Inspired, meaning I didn’t have the correct ingredients on hand, so I winged it… and it turned out awesome! I found a Martha Stewart recipe that I HAD to try, but unfortunately the grocery store was out of jalapenos and I forgot the fresh ginger. In came the serrano peppers and the ground cloves. Yum! This recipe turned out great, can’t wait to make it again!

Tandoori Inspired Chicken

Ingredients
  •     2 tablespoons fresh lime juice
  •     4 garlic cloves
  •     ½ teaspoon ground cloves
  •     3 serrano peppers, chopped
  •     1 cup plain yogurt I used (Zoi Greek Yogurt)
  •     8 boneless, skinless chicken thighs (about 1 3/4 pounds)

Directions
1. Add lime juice, garlic cloves, ground cloves, serrano peppers and yogurt to blender. Blend well.
2. Marinade chicken in yogurt mixture for 3-6 hours
3. Cook that chicken! I used my rotisserie but this recipe would also be great for grilling.

Sangria


Sangria

Ingredients
  • 1 Bottle Red Wine (I used Cabernet Sauvignon but a Merlot, Zinfandel or Shiraz would work as well)
  • 1 Lemon - cut into wedges
  • 1 Orange - cut into wedges
  • 1 Lime - cut into wedges
  • 2 Tablespoon Sugar
  • Splash Orange Juice or Lemonade (I used both because that’s how I roll)
  • 1 Can Diced Pineapples (with juice)
  • 2 Shots Triple Sec (perhaps add an extra one for good measure…)
  • 1 Cup Frozen Strawberries
  • 30 ounce Ginger Ale soda

Directions
  1. Place wine in large container
  2. Into same container, squeeze the juice from the lemon, orange and lime - adding the fruit wedges as you go along. Also add the sugar, can of pineapple and juice(s)
  3. Chill overnight
  4. Add Triple Sec, Strawberries, and Ginger Ale.
  5. Enjoy over Ice!
