Marinated Mushrooms

These Marinated Mushrooms are an easy-to-make savory side dish! With flavors of fresh herbs, garlic, tangy red onion, red pepper and lemon juice these mushrooms pack a serious punch of delicious flavor. Try these Marinated Mushrooms as an appetizer, on salads, in pastas or served alongside cheesy pizza.


I don't think I've ever consumed as much pizza in a 30-day period as I have this past month. While I love cooking, especially in the winter months, the time just hasn't been there this season. Our schedules have been chaotic and have left me with hardly any time in the kitchen. So, it's been a lot of take-out and frozen pizzas. This past weekend I decided to try out a new side to serve alongside our pizza - these fabulous Marinated Mushrooms.


I am big fan of the marinated mushrooms that are sold in jars and was totally excited about trying my own take on the tasty bites. I had no idea how easy they were to make and love how they can just marinate away in the fridge until ready to be served. They are also easily customized - just substitute different herbs and spices for a whole new flavor. Put these mushrooms in dishes, on dishes, alongside dishes or just eat them by themselves - they are seriously delicious!


The homemade Marinated Mushrooms were a perfect accompaniment to cheesy breadsticks made with Red Baron® 5 Cheese & Garlic French Bread Pizza Singles. Since I had prepared the marinated mushrooms earlier in the day, all I had to do was cook the pizzas - so easy! The mushrooms taste best at room temperature so I just pulled the mushrooms from the fridge when I fired up the oven and they were perfect by mealtime. Dinner was on the table within 30 minutes - now that is what I am talking about! Less time in the kitchen means more time for holiday fun, which we have a lot of this season.


There is so much cheesy-goodness in these Red Baron® 5 Cheese & Garlic French Bread Pizza Singles. {they also have Pepperoni, 3-Meat and Supreme varieties available} I love the crispiness of the french bread crust and the tangy flavor of the rich garlic sauce - I can easily say these are my new frozen pizza go-to. Cut into breadsticks and served with ranch dipping sauce they were a hit with my kiddos too, perfect for the whole family.

Marinated Mushrooms
PRINTABLE RECIPE
Ingredients
2 tablespoon olive oil
2 tablespoons white wine vinegar
1 teaspoon freshly squeezed lemon juice
1 tablespoon minced garlic
1 tablespoon minced fresh basil
2 teaspoons minced fresh rosemary
2 teaspoons minced fresh oregano
¼ cup minced red onion
1 teaspoon salt
½ teaspoon red pepper flakes
1lb fresh cremini mushroom, washed and stems trimmed
Directions
1 Mix together olive oil, vinegar, garlic, fresh herbs, onion, salt and pepper flakes, set aside.
2 In large stockpot, bring water {add salt to water} to boil. Add mushrooms for 3-4 minutes, until mushrooms are tender. Drain and rinse with cold water to stop the cooking.
3 Place mushrooms in a bowl and pour marinade over the top, gently mix to make sure all mushrooms are coated with marinade.
4 Let mushrooms marinate in refrigerator for at least 2 hours, bringing to room temperature before serving.
