Buffalo Chicken Rolls


Don't you love when you can make something awesome out of ingredients you just happen to have on hand? After making Leftover Pumpkin Pie Cinnamon Rolls, I was determined to get crafty with a package of rolls that were leftover from Thanksgiving dinner. I grabbed some frozen chicken thighs, Frank's Red Hot Wings Sauce {Buffalo}, Marie's Chunky Blue Cheese Dressing and some Parmesan Cheese. Then I got to work creating these friggin' awesome Buffalo Chicken Rolls. They are like savory cupcakes of spicy meat with a cool frosting - they are addicting to say the very, very least. Even leftover and cold.

First, I defrosted the chicken thighs and seasoned with salt & pepper. Then I grilled until done.


Chopped it up.


I got a scant 2 cups after feeding little monsters kids that kept walking by. {oh, I took some too...}


Then I mixed the chicken with hot sauce and parmesan cheese.


Here are those leftover rolls I had mentioned before. They were croissant muffins - pretty genius if you ask me.


I cut into the center of each roll and placed them in a muffin pan.


Then I CRAMMED them full of the chicken mixture. I was surprised how much chicken fit into each roll.


Popped them into the oven at 350 for about 15 minutes and then drizzled plopped a nice mound of blue cheese dressing on top of each roll.


These are what dreams are made of. They would be perfect paired with a salad - or just by themselves as we had them. {shameless}


Buffalo Chicken Rolls
(PRINTABLE RECIPE)
Ingredients
2 cups cooked chicken, chopped {i used grilled, but any chicken would work}
½ cup parmesan cheese, shredded
½ cup hot sauce {i used Frank’s Wing Sauce - Buffalo}
6 muffins or rolls that will fit into muffin pan
¾ cup blue cheese dressing {i used Marie’s Chunky Blue Cheese}
Directions
1. Mix together chicken, hot sauce and parmesan cheese.
2. Cut out the top of each muffin so a small cup is created.
3. Fill muffins with chicken.
4. Bake stuffed rolls at 350 for 15 minutes or until tops are golden brown.
5. Immediately dollop each muffin with 2 tablespoons of blue cheese dressing.
6. Devour. Try to share. :)
