Mom's Easy Mac & Cheese


 I never thought this day would come, but it is here - I am posting a recipe from my Mom! To be fair, I don't think I have ever wrote about my Mom's culinary skills, so you may be wondering why it's such a big deal that she FINALLY gave me a recipe. Well, my Mom is a lot of things (loving, smart, supportive, beautiful) but being a cook has never been one of them. It's not that she is a bad cook - she just never really cooked. However, she has recently started letting her culinary wings expand and has started trying new recipes - yay for Mom!! 

The Lord knows there is a "cooking gene" in our family - my Grandma could cook up a feast for a small army (and probably a big one had you asked her to) and have everyone's belly and taste-buds satisfied. My Mom has made numerous jokes about the cooking gene passing a generation, skipping her. But it seems now that the cooking gene is making an appearance in my Mom - which is very exciting, and I am looking forward to the recipes she finds along the way!

Oh, and if you do know my mom - no need to get your head examined, she indeed made a recipe with onions in it. Are the tides changing? :)

Mom's Easy Mac & Cheese

Ingredients
1 can Cream of Mushroom Soup (10.75 oz)
1/2 cup milk
1/2 teaspoon prepared mustard
¼ teaspoon black pepper
3 cups elbow pasta, cooked and drained
2 cups shredded cheese - any kind your heart desires ♥
1 can (2.8 ounces) French fried onions
Directions
1. Heat the oven to 400°F.
2. Stir the soup, milk, mustard, pepper, pasta and 1 1/2 cups of the cheese
in a baking dish.
3. Bake for 20 minutes or until it's hot and bubbling.
4. Stir the mixture. Sprinkle with onions and remaining cheese, bake until the
onions are golden.

Looks delicious! And I love the twist on the bread crumb topping. We'll definitely give this a try-- I love me some homemade mac n cheese.

Well, the mushroom soup nearly ruined this for me, but the overall concept sounds great. I despise bread crumbs on my mac-n-cheese, but when I saw these crunchy onions (I do love them!), I was instantly attracted!! Even if I swap out the soup, I think I'm going to have to try this one.

My mom was always like your mom, except there was always a few things she could cook really well. That's great that your mom is cooking more. This macaroni and cheese looks great! I really like the French Fried Onions on top.
