Eggnog Poke Cake with Glazed Walnuts {plus a $10 PayPal Giveaway}


This Eggnog Poke Cake with Glazed Walnuts is a must this holiday season! It's a yellow cake speckled with sweet-glazed walnut chips, soaked in Eggnog before being drenched in Eggnog Pudding, topped with whipped cream and more glazed walnuts. This is perfect served with a tall glass of milk. Or eggnog - because eggnog.


I am not much of a baker, but there is something about the holiday season that makes me want to get in the kitchen and start cranking out sweets from the oven. And since I am not much of a baker - I am all about the boxed cake mixes. I've tried my hand at making cakes from scratch and they just never turn out quite right, so I stick with what I know works. My favorite is Betty Crocker Super Moist Cake Mixes, they are seriously moist and never let me down! 


I found the glazed walnuts for this recipe in the bulk section at WinCo, one of my favorite grocery stores. Their bulk section has an amazing selection and great prices. Year-round I buy grains, snacks, nuts, candies, pastas and so much more from the bulk section at WinCo - but during the holiday season I am all about the baking ingredients they have on-hand! So much fun holiday-themed ingredients and candies, I seriously feel like a kid in a candy store.

Eggnog Poke Cake with Glazed Walnuts
PRINTABLE RECIPE
Ingredients
1 box Betty Crocker Yellow Cake Mix
2 eggs
½ cup vegetable oil
1 cup eggnog
½ cup chopped glazed walnuts
2 cups eggnog
1 3.4oz package vanilla pudding mix
2 cup eggnog
whipped cream for topping
1 cup chopped glazed walnuts
Directions
1 Heat oven to 350, grease 9x13” baking dish.
2 Mix together cake mix, eggs, vegetable oil and 1 cup eggnog until fully incorporated and smooth. Stir in ½ cup glazed walnuts. Pour into baking dish and bake 25-30 minutes, until top is golden brown.
3 When cake is removed from oven immediately poke holes all over the top using a slender object, such as a chopstick. Evenly pour 2 cups of egg nog over the top of the entire cake, let sit for 5 minutes.
4 Mix together pudding mix and 2 cups of egg nog and immediately pour evenly over the top of cake. Place in refrigerator for at least an hour to allow pudding to set.
5 Spread whipped cream over top of cake and sprinkle with 1 cup chopped glazed walnuts.
6 Serve immediately, store in refrigerator.
