Shredded Chicken Dip Sandwiches

For some quick meals that won't heat up the kitchen I like to keep a batch of shredded chicken on hand in the summertime. By waiting until the sun sets {and the soaring temperatures fade} I can easily boil a pot of chicken breasts to make handy-dandy shredded chicken and still keep my kitchen cool. We use shredded chicken in salads, tacos, summer soups and a ton of sandwiches. A ton. Two of my favorite sandwiches are Philly Cheesesteaks and French Dips - so I decided to create a mash-up of the two and sub-in shredded chicken for the beef. Wowza, these Shredded Chicken Dip Sandwiches were an absolute hit! It has the delicious peppers and onions of a Philly Cheesesteak and an awesome dip just like with a French Dip - this sandwich is sure to please the masses.


I am a Swanson Chicken Broth fan through and through. Serious. My dad has used Swanson Chicken Broth for his "famous chicken" for as far back as I can remember, so I grew up with those blue and white cans in our pantry. Now it's in my pantry - but I've graduated from the cans to the 32oz. cartons, which I buy by the 6-pack from Sam's Club. It's a serious long-lasting love that I have with Swanson Chicken Broth. Their broth is 100% natural {no preservatives or artificial flavors!} and is 99% fat free with no MSG added - lest I mention that the flavor is above other broths that I've tried. Since this broth has been perfectly simmered with garden vegetables it really adds an authentic flavor to homemade dishes.

When boiling chicken I like to substitute water with Swanson Chicken Broth - it not only creates a richer flavor in the chicken but it can also be saved to use in another delicious recipe!


For these mouth-watering Shredded Chicken Dip Sandwiches I combined shredded chicken with chicken broth, sautéed green bell peppers, onions and garlic.


Divided the meat over two Dutch Crust rolls and topped with sliced provolone {just like on a cheesesteak!}


Then broiled until the cheese was melted. We enjoyed these sandwiches with a warm dip made from Swanson Chicken Broth and a couple herbs + spices. Both the bread and shredded chicken soaked up the dip perfectly, creating a deliciously juicy sandwich!


Shredded Chicken Dip Sandwiches
{PRINTABLE RECIPE}
yields 2 sandwiches
Ingredients
½ cup diced green bell pepper
½ cup diced onions
1 garlic clove, minced
2 cups shredded chicken
2 cups Swanson Chicken Broth
¼ teaspoon ground black pepper
¼ teaspoon sea salt
2 6” hoagie rolls
4 slices provolone cheese
⅛ teaspoon italian seasoning
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
Directions
1 Heat oven to broil
2 In a skillet over medium-high heat, saute green bell peppers, onions and garlic until peppers are tender and garlic is golden-brown.
3 Stir together shredded chicken, green bell pepper mixture, ¼ cup chicken broth, salt and pepper.
4 Divide chicken between two hoagie rolls and top with cheese. Broil until cheese has melted.
5 Stir in italian seasoning, garlic powder and onion powder to 1½ cups chicken broth. Heat in microwave for 30 seconds or until warm.
6 Serve sandwiches with warmed chicken broth and enjoy!!
