Bruschetta Chicken Kabobs + a Char-Broil Kettleman™ Grill

Grilling season is here and I couldn't be happier about it! I grill year-long, but there is something special about Spring and Summertime that you don't get in the winter months. From the long days to the sounds of kids giggling while running through the sprinkler, it's just the feel of this special time of year that I love. This year I am even more excited for the warm season because have a new addition to our backyard - Char-Broil's new Kettleman™ TRU-Infrared™ 22.5" Charcoal Grill! It's been years since I've grilled on a charcoal grill and I was totally excited about getting back in the saddle with this Char-Broil beauty. I've been using a propane gas grill and although it is a breeze to just push a button and get started there is something so much more satisfying about firing up those charcoal briquettes myself and preparing the grill for cooking. It's a hands-on process that is oh-so gratifying!

As soon as we got the Char-Broil Kettleman Grill delivered to our doorstep, my husband started the assembling and I was off to the store for charcoal briquettes! The first recipe I decided to grill up were Chicken Bruschetta Kabobs. I wanted something fresh and fun to eat - the kabobs were just that. I know a recipe is a great success at our house when all 4 of the kids are digging in!


While the shape may be familiar, the Char-Broil Kettleman™ Grill is no ordinary charcoal kettle – it is loaded with features that give backyard enthusiasts better control over every aspect of the cooking process. Several of my favorite features are the lid-mounted temperature gauge, hinged lid, super-sized damper and removable ash bowl. Our first meal on the new grill came out wonderful! It was so nice sitting out on the back patio in the warm weather, enjoying the flavors of fresh tomatoes, garlic and basil over perfectly grilled chicken kabobs. These Chicken Bruschetta Kabobs paired with a side salad and brown rice, make a perfect warm weather meal to enjoy outdoors!


Bruschetta Chicken Kabobs
{PRINTABLE RECIPE}
yields approximately 10 kabobs
Ingredients
2lbs chicken breasts, cubed into 1” pieces
10 skewers
salt & pepper to taste
6 roma tomatoes, chopped
3 garlic cloves, chopped
6 larger basil leaves, chopped
1 teaspoon sea salt
½ teaspoon ground black pepper
1 tablespoon olive oil
1 teaspoon balsamic vinegar
Directions
1. Get your grill started!
2. Skewer chicken breasts, leaving a small gap in between pieces. Season with salt and pepper, set aside.
3. Mix together tomatoes, garlic, basil, sea salt, pepper, olive oil and balsamic vinegar. Cover bowl and place in fridge.
4. Grill chicken kabobs until chicken are thoroughly cooked. {Chicken should be cooked to an internal temperature of 165 degrees.}
5. Place chicken kabobs on plate and cover with bruschetta.
6. Enjoy!
