Cheesy Pineapple Dip with Bacon

Although this blog post is for a recipe, I would also like to think of it as a Public Service Announcement. The reason being is that this Cheesy Pineapple Dip with Bacon is the absolute bee's knees and should be served at every party this summer season - and then every season after that. And then every other party you ever go to. Just sayin...

If I was a chip I would make love to this dip.

The inspiration for this ever-so-tasty Cheesy Pineapple Dip with Bacon was Kettle Brand Jalapeno Jack Potato Chips. I wanted the bag of chips but couldn't justify sitting on the couch {or standing in the kitchen at the counter} and pigging out on a bag of chips. So, I created a dip - because I can totally justify pigging out on a bag of chips and a dish of warm gooey dip... {i'm not alone, right?} My hope was that the flavors of the dip would complement the flavors of the Kettle Brand Jalapeno Jack Potato Chips, and I totally scored!!

The sweetness of the pineapple along with the spiciness of the onion and garlic, mixed with the smoky bacon is the perfect combination all on it's own. It would go great with just about any cracker, but when it's paired with the Jalapeno Jack chips the flavors explode like fireworks in your mouth. {not literally} Hope you enjoy!

Cheesy Pineapple Dip with Bacon
8oz cream cheese, softened to room temperature
8 oz can crushed pineapple
1¼ cup shredded monterey jack cheese, divided
¼ cup, plus 2 tablespoons chopped green onions
2 tablespoons chopped red onions
1 cup chopped bacon, divided
2 cloves garlic, chopped
1. Heat oven to 350
2. Mix together cream cheese, pineapple, ¾ cup jack cheese, ¼ cup green onions, red onions, ⅔ cup bacon and garlic together until well combined. Pour into 7x5 oven-safe dish and bake for 30 minutes. Sprinkle remaning cheese, green onion and bacon on top and bake for additional 5 minutes or until cheese is melted.
