Garlic-Chicken-Pizza Potatoes

One thing that I love is one-pot dinners. Plain and simple, less dishes = happy momma. Another thing that I {and the Hungry Harps clan} love is pizza. Oh, it's a serious love. Perhaps an addiction, but I'm not trying to kick the habit. Anyhow, the inspiration for these Garlic-Chicken-Pizza Potatoes is one of my favorite pizzas from Mountain Mike's Pizza, the Robber's Roost - it's sooooo delicious! But the only problem I have with making pizza is not always having dough ready, so I thought of doing a potato-base instead of pizza dough. The result was amazing and I am so excited to try different toppings on this new creation!


Since the cooking time for this dish isn't long, I made sure to have all of the ingredients ready before I started cooking. Being the pizza lovers that we are, I have pizza topping ingredients on hand anyway - so putting this dish together was a cinch!

The hardest part was opening the can of olives...


And measuring out the ingredients...


Then it was basically like making a pizza, except I had to saute some potatoes first.


Finally the Garlic-Chicken-Pizza Potatoes were baked. So simple and so tasty. The Hungry Harps devoured this dish like there was no tomorrow. I'm not a huge leftover fan, however I was a little bummed to not be able to have this dish for lunch the next day. {totally true story}


Garlic-Chicken-Pizza Potatoes
(PRINTABLE RECIPE)
Ingredients
2 tablespoons olive oil
1 tablespoon butter
2lbs red potatoes, diced
1 teaspoon salt
½ teaspoon ground black pepper
¾ teaspoon italian seasoning
¼ cup garlic & herb sauce
2 cups mozzarella cheese, shredded
1 cup cooked chicken breasts, chopped
1 2.25oz can sliced black olives
⅛ cup sliced garlic
¼ cup chopped green onions
¾ cup diced tomatoes
Directions
1. In large skillet, heat olive oil and butter over medium high heat. Add potatoes, salt, ground black pepper and italian seasoning. Cook for 2 minutes over medium-high heat. Lower heat to low-medium, cover skillet and cook for 5 minutes - without stirring or lifting the lid. Lift lid, stir and reduce heat to low, covering skillet again and cooking for 3 minutes. Remove from heat and remove lid. Let cool a touch - pre-heat oven to 400.
2. Leave potatoes in skillet and evenly distribute garlic & herb sauce. Then add mozzarella cheese, chicken, olives and sliced garlic. Bake, uncovered, for 7 minutes then add green onions and tomatoes, bake for an additional 5 minutes.
3. Enjoy!
