Lemon-Ginger Marinated Shrimp {No-Cook}


I remember being young and turning my nose up at cocktail shrimp. It just seemed a little disgusting to me even though I loved fried, grilled and sauteed shrimp. Then one day, I don't remember where, the only appetizer was cocktail shrimp. So I reluctantly tried one, smothered in cocktail sauce... OMG. Yeah, I ended up with a belly full of cocktail shrimp - they were so fresh and delicious!!



Fast forward to meeting Mr. Hungry Harp and his family - most importantly his Grandma. I can always count on Grandma to have cocktail shrimp at family gatherings. {Thank you, Grandma!} Sometimes she marinates them in different spices and seasons - delicious!

I decided to make my own little marinade using some of the Hungry Harps favorite ingredients and came up with these Lemon-Ginger Marinated Shrimp. These are perfect for an appetizer or snack or cold dinner. I'm thinking of marinating them and then sauteing, yeah? Hope you enjoy!! 


Lemon-Ginger Marinated Shrimp {No-Cook}
(PRINTABLE RECIPE)
Ingredients
¼ cup olive oil
2 tbsp honey
2 tbsp lemon juice
zest of 1 lemon
½ tsp chili flakes
1 tbsp chives, chopped
¼ tsp salt
1 lb large shrimp - cooked, peeled, deveined & tail-on
Directions
1. Mix together oil, honey, lemon juice, lemon zest, chili flakes, chives and salt.
2. Pour over shrimp, stir to coat evenly.
3. Let chill for at least 30 minutes before serving to let flavors marinate.
4. Devour. :)
