Lemon-Hazelnut Oatmeal Shortbread Cookies

What do you do when life gives you lemons? Make Lemon-Hazelnut Oatmeal Shortbread Cookies of course!

These Lemon-Hazelnut Oatmeal Shortbread Cookies are the perfect blend of oatmeal and shortbread cookies - with the delicious addition of lemon zest and chopped hazelnuts. I've enjoyed the zesty little sweets with a glass of cold milk and also with a cup of tea - both make perfect pairings!


These Lemon-Hazelnut Oatmeal Shortbread Cookies look so simple, yet they are bursting with flavor. While I was taking pictures for this post I had a small huddle around me, just waiting for the camera to stop clicking so that the devouring could begin. The Hungry Harps become instant cookie monsters for these bad boys! 


Lemon-Hazelnut Oatmeal Shortbread Cookies
(PRINTABLE RECIPE)
yields approx. 40 delicious cookies
Ingredients
1 cup butter, softened
1 cup powdered sugar
1 ½ cups flour
1 teaspoon baking soda
1 cup quick cooking oats
2 teaspoons vanilla extract
juice of half lemon
zest of 1 lemon
½ cup chopped hazelnuts
Directions
1. Heat oven to 325. Grease baking sheet.
2. Cream together butter and powdered sugar until smooth. Add flour, baking soda, oats, vanilla and lemon juice - mix until combined. Stir in lemon zest and hazelnuts.
3. Drop dough by tablespoonfuls onto baking sheets. {I used a cookie scoop which worked wonderfully!} Bake for 15 minutes or until cookies start to turn golden-brown around edges. Let cool on baking rack. Enjoy!
