Supper Haystacks


Happy New Year!! A lot of great memories were made last year and I look forward to making many new ones in 2012. Now that the holiday season is about over it is time to look towards the coming year and the changes we can make for the better. I have made a few personal New Year’s Resolutions, but I have also made a couple I can share. For one, this family is not going out to eat except for social events with our families and food festivals. While we don’t eat out that much as it is, it seems every time that we do we end up feeling ripped off – like we could have eaten something of much better quality and taste at home for a lesser price. So that is the first change. The second is sitting down to eat dinner with the whole family every night. There are 4 of us, and two of us are under the age of 3 – so there is no excuse as to why we haven’t been doing this already. We have gotten into a grind of feeding the kids before we eat, and that is about to change. Those are our food-related resolutions. Pretty simple and I look forward to the changes in the coming year. I wish luck and fortune to all of you in 2012; let’s make it a good one!

To kick of the New Year on Hungry Harps I am sharing a dish with the utmost comfort. Rice, turkey, cream of mushroom, cheese, peas and onions. Yum. Plus it has the delicious gooey factors of creamy and cheesiness. No wonder why I love it so much. This dish is easy, tasty and reminds me so much of the simple dishes of childhood. I hope you enjoy it as much as I do!

I found everything I needed at Smart & Final!!

Supper Haystacks
Prep Time: 5 minutes
Cook Time: 25 minutes
Ingredients
1 cup long grain rice
1.25 lbs Jennie-O Ground Turkey
2 10.75 oz cans cream of mushroom
½ cup milk
1 15oz can sweet peas
1 cup First Street Chunk Mild Cheddar Cheese, shredded
1 cup fried onion pieces
Directions
1. Cook rice according to package
2. In large skillet brown ground turkey, drain
3. Add cream of mushroom soups and milk to skillet, combine well and heat through
4. Warm peas in separate dish
5. On each serving platter layer rice, turkey mixture, peas, shredded cheese and then fried onions
6. Enjoy!

I think children would like it because it is diffent than having it all on a plate. A fun way to get children to eat their vegetables.

Maybe put a olive/mushroom on top to make it look like a dessert.
