Sriracha-Candied Bacon


It's certainly no secret - I have a hunka hunka burning love for BACON. I've put it in cookies, soups, dips, wrapped it around spring rolls and apples, dipped it in chocolate and of course, devoured copious amounts while standing in the kitchen cooking breakfast. My newest endeavor was to try my hand at candying some porky goodness. I'm a serious bacon-lover and was a tad skeptical of putting anything on my dear bacon before cooking it - but I took a leap of faith y'all and am so happy I did!! This Sriracha-Candied Bacon is the bee's knees. It's up there with unicorns and rainbows, trust me.

The ingredient list is short and sweet {& spicy} - honey, Sriracha, soy sauce and brown sugar.


And bacon of course! This recipe for Sriracha-Candied Bacon calls for 1/2lb. of bacon, but if you want to do more just double or triple {or quadruple} the recipe. The term "the more the merrier" fits this recipe to a tee!

Sriracha-Candied Bacon
(PRINTABLE RECIPE)
yields ½lb. bacon
Ingredients
½ cup brown sugar
½ tablespoon honey
1 tablespoon sriracha
1 tablespoon soy sauce
½lb thick cut bacon
Directions
1. Heat oven to 350
2. Mix brown sugar, honey, sriracha and soy sauce together.
3. Place pieces of bacon on baking sheet. Brush or spoon sugar mixture onto slices of bacon.
4. Bake for 20 minutes or until bacon is starting to crisp around edges.
5. Let cool on baking rack and enjoy!

Baked Dill-Artichoke Dip with Bacon


Have you ever had the Dill Sauce from La Bou? Actually upon further research I guess I should have asked if you had ever heard of La Bou first... They are a Bakery & Cafe that is evidently just in California, around the Sacramento area. Anywhoo, they have a Dill Sauce that is the bee's knees y'all! The best way I can describe it is a homemade ranch dressing that is runnier than thick, but instead of ranch it's dill. And it's awesome. It's great on sandwiches but my favorite way to eat it is with a sliced half baguette - just dip and devour. {just one step away from drinking it, I understand this... haha} While thinking about this delicious Dill Sauce the other day it dawned on me that I have never tasted a Baked Dill Dip before - so I had to make one.

And of course I had to throw some other stuff in there too... like some artichoke hearts, bacon and copious amounts of cheese. Copious.


And I was so torn between leaving the dip cold or baking it. But since we just had a cold dip last week {Spicy Beer-Cheese Dip with Bacon} I decided to throw this concoction in the oven.


And I have to be honest here and not take all the credit for this little creation - I had a little help from Hidden Valley. Their Harvest Dill Dip Mix is the closest I have tasted to La Bou's Dill Sauce - so that's what was used for the Dill flavor in this Baked Dill-Artichoke Dip with Bacon. So just rest assured that no fresh dill was harmed in the making of this dip - just the ripping of a little Hidden Valley Harvest Dill Dips Mix packet.


Baked Dill-Artichoke Dip with Bacon
(PRINTABLE RECIPE)
Ingredients
8 oz cream cheese, softened
¼ cup sour cream
¼ cup mayonnaise
½ packet (0.50 ounce) Hidden Valley Harvest Dill Dips mix
28 oz marinated artichoke hearts, chopped - divided
1½ cups cooked bacon, chopped - divided
1½ cup mozzarella cheese, shredded
½ cup parmesan cheese, shredded
Directions
1. Heat oven to 375.
2. Beat cream cheese with mixer on medium speed until smooth. Add sour cream, mayonnaise and Harvest Dill mix - mix until smooth. .
3. Add 21oz artichoke hearts, 1 cup bacon, 1 cup mozzarella and ¼ cup parmesan cheese. Mix until all ingredients are combined. Put in baking casserole and sprinkle with remaining ½ cup mozzarella.
4. Bake for 20 minutes. Remove from oven and add remaining 7oz artichoke hearts, ½ cup bacon and ¼ cup parmesan cheese. Return to oven and broil until top is golden brown.
5. Serve with crackers or sliced baguette.

My husband and I have never been big on going out to dinner on Valentine's Day. There are too many variables that could really mess up a romantic meal {lost reservations, poor service, bad food, etc.}, so we do Valentine's Day dinner at home. Plus, we've got ourselves a small brood {4 kids under the age of 5} and by going to a restaurant we could quite possibly be the cause of another couple's ruined romantic meal.  So, every year I plan us a made-at-home dinner with something easy-to-make for the kiddos {they're easy to please with tortellini, marinara sauce & baby carrots}. This year I have decided to make Tri-Sauce Lasagna Pastry for our dinner and a Butterfinger Tres Leches Cake for dessert. I was able to test out both recipes this past week and am beyond excited for our romantic meal on February 14th, 2014!

The first task was getting started on the Tri-Sauce Lasagna Pastry, it's something I have never made before and was super amped to try-out. It's basic lasagna made with marinara sauce, pesto sauce and alfredo sauce - then wrapped in a puff pastry dough and baked again until golden brown and served over more sauce. It's deliciously cheesy, crispy, saucy, meaty and above all else - it's totally novelty for a Valentine's Day romantic meal!
