#GetHimFed Fridays #7

Not only do men love to satisfy their hunger with something delightful on the palate, they are also in love with the fact that their meals are made, with love, by the women in their life. Sometimes they are even eager to please back after tasting a recipe that was whipped up for them – and those are the ones we are looking for at #GetHimFed!

Chicken-Avocado Burgers


These Chicken-Avocado Burgers could also be called Avocado-Chicken Burgers - they have about the same amount of Avocado as they do Chicken. I don't know what had gotten into me, but I was really wanting the Avocado flavor to come through. Well, it did. But not in a bad way. I think Avocado is awesome and was loving it!!

I love finding new ways to cook with Avocado and am so glad to have given this a try. It was a meal the whole family approved of - which, with 2 picky eaters, is enough to make me jump for joy. When the kids like something, it gets put on a list of things to make again, and this was one of them. Hope you enjoy!


Chicken-Avocado Burgers
(PRINTABLE RECIPE)
Ingredients
1lb ground chicken
2 medium avocados, cubed
2 green onions, chopped
½ tablespoon chili pepper flakes
1 tablespoon garlic, chopped
1 egg, beaten
½ cup breadcrumbs, seasoned or not
⅛ teaspoon salt
⅛ teaspoon pepper
Directions
1. Mix all ingredients together in bowl.
2. Form patties and place on plate. Let chill in fridge for at least 30 minutes.
3. Cook the patties however you would cook regular hamburgers. The trick is to let the patties cook long enough before flipping them or there could be a huge, inedible mess created. I speak from experience! To know when done, I cut one open to check or you can use a meat thermometer and make sure it has reached 165 degrees Farenheit.

Monterey-Ranch Chicken Tortilla Bake


This Monterey-Ranch Chicken Tortilla Bake is what would happen if two of my favorite dishes, Monterey-Ranch Chicken and Chicken Tortilla Pie, had a baby. It's so good and I can't wait to have it again. It's a dish that can be made in the morning and chilled in the fridge until dinner time. Or, you can let the chicken cook in a crock pot all day and then prepare the dish right before sticking it in the oven and cooking it. I did the latter and was AMAZED at how wonderful chicken breasts cooked in the crock pot are. (Just don't overcook them, I have done that once since making this recipe and it was a disaster. The chicken gets really dry and it's not delicious, tasting or looking...)


And lest I forget to mention that this Monterey-Ranch Chicken Tortilla Bake makes for awesome possum leftovers. Basically, everything about this dish rocks. If you like the ingredient list - you must make this! Tonight. ;)


Monterey-Ranch Chicken Tortilla Bake
(PRINTABLE RECIPE)
Ingredients
3 cups shredded chicken - I use the recipe for Cool-Ranch Chicken from Family Fresh Meals, without the broth.
4 burrito sized tortillas
1 cup ranch dressing
3 cups Colby Jack cheese, shredded
2 roma tomatoes, chopped
1 can sliced black olives (2.25 oz)
4 green onions, chopped
½ lb cooked bacon, crumbled
Directions
1. Heat oven to 350
2. In 9x13 casserole dish, place two tortillas down. They will overlap and that’s ok.
3. Top with half of the chicken, ranch dressing, cheese, tomatoes, olives, green onions and bacon. Lay down two more tortillas and repeat the layering.
4. Cover with foil and bake for 30 minutes. Remove foil and let cook for an additional 10 minutes or until cheese is completely melted and starting to bubble.
5. Let cool for 10-15 minutes and devour!

Champions for Kids & Dole - Back To School Snacks Project

Have you ever wondered how you could give back to your community? I used to rack my brain thinking of ways that I could help out, but never came up with anything that would make an actual difference. Then I found Champions for Kids. They are a wonderful organization that comes up with clever ideas each month for helping out the kids in your local community. It's genius and I love it. Their goal is to mobilize people across America, hopefully 20 million by the year 2020, to help out children in need. This month they teamed up with Dole to focus on the need for nutritious, non-perishable foods that school children can pack in their lunches. I jumped on board with this project and got ready to find some Dole Fruit Bowls and Dole Squish'ems to donate healthy snacks for kids to a local organization!

I knew right off the bat that I was going to be donating to our local food back, Orangevale Food Bank. It was formed by members of the community, to help out the community. They provide food to a few hundred families a month and sometimes have a hard time fulfilling everybody's needs, such as last summer when they ran out of food. It is heart-breaking to know there were families in need of food, but were unable to get it from a local organization. Orangevale Food Bank is where I donate any & all food I have to contribute!

It's a crucial time of year for these types of donations, as school is starting up again and some families are in need of items to pack their kiddos for bagged lunches. Did you ever "brown bag" it for school lunch? I sure did and I was lucky that my parents were able to provide me with every food group,but not everyone is lucky like I was. Some kids will go days without eating any fruit - and that is heartbreaking. Kids should be eating 2 servings of fruit a day and by donating Dole products, we can help those that aren't able to meet that amount on their own. I love watching my kids eat and get full off nutritious food and it warms my heart to know there is something I can do for another child who may not normally get these items.

We all know what Dole Fruit Bowls are, right?


They are a classic for the kiddos and perfect for a donation to a local food pantry. The Orangevale Food Bank has a Current Needs list on their site and canned fruit is currently at #1. I grabbed 10 in several different varities; Cherry Mixed Fruit, Diced Apples, Diced Peaches, Diced Pears, Mandarin Oranges, Mixed Fruit, Pineapple Tidbits and Tropical Fruit. Each Dole Fruit Bowl, packed with all natural fruit and 100% juice, is one full serving of fruit and is a great source of vitamin C.

Have you heard about Dole Squish'ems yet?


These are such fun for kiddos!! Dole Squish'ems are pouches that are packed with 100% fruit - basically, Dole takes whole fruits and squish'em into a pouch. Cute play on words, huh? The current varieties include Apple, Apple Strawberry and Apple Mixed Berry. Dole Squish'ems are BPA free, GMO free, gluten free, circle u kosher, only 60 calories! They are great for school lunches and such a fun addition to our donation - I am thinking they are certainly going to put a smile on some kiddos faces. :)

I picked up 10 boxes of Dole Fruit Bowls and 10 boxes of Dole Fruit Squish'ems from my local Walmart. I posted my shopping trip on Google+, with lots of pics of all the fun Dole products I found on my shopping trip.


The organization we donated to, Orangevale Food Bank, is only available to accept donation on site every Thursday but has a few donation drop off locations around town. My oldest son and I loaded up our donation into the car and took off to donate the healthy snacks for kids.


We ended up at True Blue Auto Care and put our donation into a drop-off container. I love having my big boy help me with donations, it's great talking to him about what we are doing and why. It warms my heart to see it click with him and him understand it and that he has compassion for those less fortunate than himself.


You may be wondering how I can justify going out and spending money to help others,but it's real easy. There are things that my family indulges in, things like coffee from a coffee shop or new release Blu Ray movies - so we cut out those fun things for a couple weeks. It may sound like a long time to not have anything special for ourselves, but 2 weeks goes by like there is no tomorrow around our house. With 4 kids, I am barely able to keep track of the days as it is! Trust me when I tell you that dropping off a donation to help less fortunate kids feels a thousand times better than enjoying a Hazelnut White Mocha - trust me.

Meat Lovers Dinner Spread with Save Mart's {Pick 5 for $25} Promotion #FreshFinds

To celebrate my family's love of meat, as part of a sponsored post for Collective Bias® and Save Mart, I made a Meat Lovers Dinner Spread using meat from my local Save Mart Supermarket. #FreshFinds #cbias


This past weekend I made a few Meat Lover's dreams come true! I prepared a Meat Lovers Dinner Spread where every dish had meat in it. It was fun to create, cook and serve - not to mention that it was DELICIOUS to eat. My inspiration was Save Mart Supermarket's current Pick 5 for $25 promotion, they have an awesome selection of meat for $5 each if you purchase 5 of the qualifying products.

I bought a couple Boneless New York Steaks, a Salmon Fillet, Large Prawns and Ground Beef. Those choices weren't even half of the selection. There was also chicken products, ground turkey, tilapia fillets, lamb chops, country style ribs, albacore tuna steaks and so much more! I posted pics from my shopping trip on Google+ if you want to see all the goodies I found. :)

What I loved was how everything that was included in the promotion had a big round sticker on it - it made it so much easier to make my selections. It can be so annoying to look for an item that you know is on sale, but there is no signage. No worries at Save Mart!! I even found items that were not in the store advertisement such as frozen Tyson chicken products like chicken nuggets and popcorn chicken!


Without any firther ado, let me share with you how I made our Meat Lovers Dinner Spread!

The first dish I prepped was an Asian Salad with Grilled Salmon. This was so easy! Just marinate the salmon in teriyaki sauce, grill (skin side down) then chop, cool and mix with a bagged salad that has Asian flavors to it. I used Taylor Farms Asian Salad that I found in Save Mart's produce section.


This tasted amazing and is definitely going to be served again! The flavors just meshed perfectly together.


Next was the Lemon-Pepper with Dill Prawn Skewers. This dish is also super easy - just a little time consuming. I shelled the prawns and thread them onto bbq skewers. I used the method that we use for baiting a hook with shrimp, just start at the tail and go through the body. Then they sat in a marinade I found at Save Mart, Weber Just Add Juice Lemon Pepper, with fresh dill added. These bad boys only need a few minutes on the grill to cook - you know they are done when they turn pink!


These were a HUGE hit and I can't wait to make them with different marinades. They are so easy to eat and the kids found them very intriguing.


Then the Rodeo Cheeseburger Stuffed Potatoes! I browned up half a pound of ground beef and half a pound of beef bacon (the bacon was not part of the Pick 5 for $25 promotion, is was just something that I couldn't live without!) and added fried onion. I filled up cooked potato shells and topped with cheese and bbq sauce, then baked at 350 until melted.


These were delicious and such a fun spin on stuffed potato skins!


And last, but certainly not least, was our Mini New York Steaks with Blue Cheesy Mushroom Topper. Oh my!! I call them mini because we cut the steaks in half. To season the meat all I used was Garlic Salt with Parsley and Ground Black Pepper, then let it sit in the refrigerator for about 45 minutes before cooking.

The Mushroom Topper was made while the steaks were grilling - its fast and fresh! If you like mushrooms and you like blue cheese - you will definitely want to keep this recipe in mind next time you will be grilling up some steaks!


Blue Cheesy Mushroom Topper for Steak
(PRINTABLE RECIPE)
Ingredients
2 tablespoons butter
8oz Mushrooms
½ tablespoon fresh garlic, chopped
½ tablespoon fresh chives, chopped
¼ cup blue cheese, crumbled
Directions
1. Melt butter in skillet over medium-high heat.
2. Add mushrooms and cook for a few minutes until mushrooms are soft.
3. Add garlic and chives. Cook for a couple more minutes until garlic starts to turn golden.
4. Remove from heat and stir in blue cheese crumbles. Cover and let sit a couple minutes.
5. Top steaks and serve immediately.

Philly Cheesesteak Sliders


I know that these do not sound super exciting and that they are not very original. But what they do have going for them is that they are freaking delicious. There was no intention of blogging about these when I made them, but they were so good that I had to grab the camera and take a couple pics to share.

I shop for our groceries every 2 weeks. It's how my parents did it when I was raised and now that I am in charge of food for my family, I do it the same way. Every two weeks I sit down and meal plan, it may sound like a chore to some but it is something I LOVE doing. One day I should really share how I do it, because it really works for saving money and eating healthy(ish). Anyway, I make a shopping list and rarely veer from it while at the store. These little sandwiches were part of my occasional veering...

I was planning on making the oh-so famous Funeral Sandwiches, that you have seen EVERYWHERE on Pinterest. They are a favorite around this establishment and were on the meal plan for a weekend lunch. However, when I went to buy ham - I had a sudden change of heart. The beef was calling to me. So these were created.

Although we had them for lunch, they would be a great appetizer or make-ahead lunch for busy weekends. Just prepare them up to the point of wrapping in foil and then place in the fridge until ready to cook.

What kind of fun things have you done with Hawaiian Sweet Rolls? I am just in love with them!!


Philly Cheesesteak Sliders
(PRINTABLE RECIPE)
makes 12 sliders
Ingredients
2 tablespoons olive oil
1 green bell pepper, chopped
1 small onion, chopped
1½ tablespoon garlic, chopped - divided
1/2lb deli sliced roast beef, chopped
12 Pack Original Hawaiian Sweet Rolls
½ cup mayonnaise
6 slices provolone cheese, quartered
½ cup butter
½ tablespoon garlic, chopped
Directions
1. Heat olive oil in skillet over med-high heat. Add green bell peppers and cook for a couple minutes. Add onions and cook for another couple minutes. Add 1 tablespoon of garlic and roast beef, cooking until any liquid given off from the meat has evaporated. Remove from heat and set aside.
2. Preheat oven to 350.
3. Slice Hawaiian Sweet Rolls in half and place bottom halves in baking dish. Smear 2 teaspoons of mayonnaise on each roll and top with a quarter slice of cheese. Divide the roast beef mixture over the rolls and then add another quarter slice of cheese. Top with top half of rolls.
4. Melt together butter and ½ tablespoon garlic. Brush over the top of rolls.
5. Wrap baking dish in foil and bake for 25 minutes. Remove foil and bake for another 10 minutes or until tops of buns start to darken.
6. Devour. And try to share. ;)
